I head straight to parts diagrams from Ford/dealrship, as most of the time these questions will be answered. Well, the engine oil pressure switch has been a leak point for the nat asp engines, so might be exactly the same problem you are facing with the leak (assuming it is not a messy oil change). I believe it is still a "dumb" switch, does not show you exact oil pressure.

For electronics issues, seems like the most popular fix has been to disconnect the neg battery cable for a period of time, then reconnect. A little fuzzy on for how how people have disconnected prior to getting results, but should be no more than 40 min or so. Now if the screen goes blank or shows upside down backup image, those will not get fixed this way. A small drop in coolant level is normal for any vehicle over the course of a year. When the dealerships checked, did they test the degas bottle cap? Did they hold pressure on the system for 10 minutes or more? Small leaks will show up over time, not right away, with this test. I believe the water pump is external on the 2.0, so a repair bill would not break the bank like it does on the NA or EB 3.5. It is possible there are microcracks in the heads like there were in the 1.6, but I have not seen such reports for the 2.0. If it drops a 1/4" or less over a year, you should be fine. Keep it topped off at the TOP of the COLD FILL range. Keep fluids refreshed well ahead of schedule and you should see minimal issues with the powertrain. Ecoboosts need occasional heavy throttle driving, so be sure to give your Edge the goods once in a while.

Which is a travesty, because these things should always be replaced in pairs. But what can u do? -
Very often no codes in the early stages. The valve failures have just started showing up on the Gen 1s. Showed up quite some time ago on the Gen 1.5. Actually the valve is more expensive for Gen 1 than 1.5, almost twice the price for OEM. Vacuum test the valve. If it can't hold about 21 psi, it needs to be replaced.

For the turbocharged engines it is highly recommended to go full synthetic right from the start, whether it be Motorcraft, Castrol, Pennzoil, Mobil1, Amsoil, Royal Purple, etc. Motorcraft oils do hold their own pretty well tho, and as akirby mentioned, the oil change interval is even more important than the oil. This is a second-gen 2.0, but I would not want to be surprised that issues from the first-gen carry over. The 2.0 is a "dirty" engine, and does well with frequent oil changes.
